Kesar Peda

Preparation time: 8-10 minutes
Cooking time: 30 minutes
Makes: 18-20 Pedas

Ingredients:

  • 400 gm Soft white milk fudge (khoya)
  • sugar powdered to taste
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon rose essence/rose water(optional)
  • 1 tablespoon slivered or crushed pistachios or almonds
  • A few strands of saffron
  • 1/4 cup  warm milk

Method:

  1. Soak the saffron in warm milk.
  2. Put khoya on non-stick and heavy bottom pan over medium high heat for few minutes. Reduce the flame and cook till soft and gooey.
  3. Make sure to stir continuously, while on heat. When mixture is thick and gooey, add cardamom powder and saffron.
  4. Mix well, and take off fire.add rose essence and sugar mix well. Allow to cool, gently.
  5. Shape into desired sized rounds and serve.
  6. Store in airtight container.
