While in California, the healthy state, every place I went to eat, Kale leaves salad and other recipes caught my eyes. It was a trend and all elite did it. It started among celebrity and spread vastly evading through every small menu place. What is the secret?

This fashionable vegetable is highly in demand but is it because kale is the secret recipe to everlasting health and youth?

Kale:

Is rich in green and fluffed with fresh and crisp leaves. This super food can be found all year round in markets, but is more available from the middle of the winter to beginning of the spring and has a sweeter taste. Some claim kale came to popularity after the big recall on American spinach and made way into a healthy living life style. Popeye the spinach hero was not happy to hear that.

Kale is a leafy vegetable that belongs to Brassica group like cabbage, sprout and collards. In shape it has curly leaves that is deep in green color and the leaves and stalks are rich in fiber. It has a lively strong taste with a hint of spicy pepper flavor.

According to WebMD.com Kale other than being another extraordinary nutrient among other vegetables, it is the healthiest vegetable on earth. It continues to describe kale as:

“One cup of kale contains 36 calories, 5 grams of fiber, and 15% of the daily requirement of calcium and vitamin B6 (pyridoxine), 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus.

Kale’s health benefits are primarily linked to the high concentration and excellent source of antioxidant vitamins A, C, and K — and sulfur containing phytonutrients.”

It’s not easy to find a food source that is uniquely rich in Iron.

  • What is Iron good for?

The declaration is Iron is the main engine to keep the life glowing. Iron is a component of Hemoglobin, the red color and pigment in blood that transport oxygen and removes the carbon dioxide from the cells. Iron has two function:

A) Blood cells

  • - Kale lowers cholesterol

What is cholesterol?

Cholesterol are a waxy, fat shape particles in the body cells. The body produces enough cholesterol to make hormones, vitamin D and other substances that help digest the food. Cholesterol use fat, “Lipid) with protein outside to travel in blood stream. In general there are two types of cholesterol: Low-density Lipoprotein or LDP, known as bad cholesterol and high-density Lipoprotein or HDP, also known as good cholesterol

Since our body produces enough amount of cholesterol needed to digest food, the intake of cholesterol from other food source effects the balance and amount of fat cholesterol in blood stream, which is alarming for heart function. Kale, helps reduces the fat and cholesterol level in blood stream.

There are numerous ways of preparing kale but amongst the healthiest is to steam it so the nutrients stay right in.

Kale salad

Kale salad is one of the most in demand in the healthy State of California. Simple recipe is to clip the leaves in small pieces after washing it thoroughly. Add small fresh red onion with diced fresh garlic. Peeled mandarin or fresh small chunks of pineapple gives it a pop in taste. If you don’t like fresh fruit in your salad, add dried sweet cranberry. To get a little more protein add a little bit of red or black beans. Mixture of extra virgin olive oil, fresh squeezed lemon mixed with a hint of salt and pepper. Enjoy.

Kale is also famous among fresh green drinks. I found this tasty mix of green recipe on my Facebook from a great friend, Jane Baek. I enjoyed making it and got to confess, it was a bit unusual for a first timer like me, but it was certainly worth the try since right after I felt an amazing energy boost right in me. Thanks Jane for allowing it to share to Bids By Pros.
