Hot Pink Cupcakes

 Ingredients
  • 1cup room temperature butter
  • 4eggs
  • 3 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/2teaspoon salt
  • 2cups sugar
  • 1 1/3cups buttermilk
  •   1/4cup frozen lemonade concentrate
  •  Red food coloring
Preheat oven to 350 degrees In  bowl stir together  flour, baking powder, and salt; set aside.  In an extra-large mixing bowl beat butter and sugar on medium until creamy.  Add 1/8 tsp red food coloring for a light pink 1/4 tsp for darker then mix. Add eggs one at a time, beating well after each egg. In bowl stir together milk, lemonade concentrate, and extract This mixture will look curdled, don't worry. Alternately add flour mixture and milk mixture to butter mixture, mix completely. Pour in prepared muffin tins and bake 20 - 30 minutes. I put my batter in two glass bowls and had enough extra to make cupcakes.
