Hiked the Takeaway Level #FarMoreSingapore

Hey everyone!

You all know how much I love making and eating food! I always try my hands on some new dishes or improvise my mom's cult favorite dishes for a change and hopefully everything goes well :) I'm a complete vegetarian and much on only eggs when I crave for proteins or my doc advises me to have it! Recently while surfing online, I came across http://discover.stayfareast.com/and went on to know some amazing things about Singapore, specially their delicious cuisines Yummy! I tell you! and I quickly researched more for a veg recipe and came across this healthy fruit and nut bread recipe that is apt for breakfast and very filling. I improvised this a bit and my parents loved it to the core. So let's get started -

You will need -
  • 300 g bread flour
  • 125 g wholemeal flour
  • 50 g walnuts, almonds, cashews : roughly chopped
  • 50 g sunflower and melon seeds
  • 150 g dried cherries, apricots and raisins
  • salt to taste
  • water
  • 2 tsps instant dried yeast
  • 2 tsps sugar

Method -

1. Sprinkle the yeast into 100 ml of the water and mix with 2 teaspoons of sugar. Stir nicely and leave aside for 25 minutes.

2. In a mixing bowl, combine bread flour, wholemeal flour and salt together.3. When the yeast mixture turns frothy, pour in the yeast mixture with half the flour bowl and make a thick paste.4. Cover the bowl plastic sheet, then leave it aside to risen. This will take about 30 - 40 minutes.5. Pour in half of the remaining water and mix in the flour. Then stir in as much of the the rest of the water as needed to form a firm, moist dough; till its smooth and elastic.6. At the end of the kneading process, add the walnuts, almonds, cashews, seeds and dried fruit.7. Put the dough in a clean bowl and cover with a plastic sheet. Leave to rise until doubled in size – about 45 minutes.8. Take the dough out of the bowl, punch the air out of the dough and divide it into 2 loaves.9. Shape the dough into a long loaf, about 25cm in length. Place the shaped dough on a baking sheet and cover with the damp tea towel.10. Preheat the oven to 190 degree Celsius.11. Bake in the oven for 35-40 minutes, until the loaf is hollow-sounding when tapped underneath.
