Flourless Almond Butter Chocolate Chip Cookies

 Flourless Almond Butter Chocolate Chip CookiesIf you are looking for a flourless (and somewhat healthy) cookie recipe that satisfies your sweet tooth this is a great recipe. These are also quick and easy to make requiring just a few basic ingredients. They are soft and chewy when first out of the oven and later become more of a crunchy cookie. Either way they are delicious!
Ingredients
1 cup almond butter1/2 cup light or dark brown sugar1/2 cup granulated sugar1 large egg1 teaspoon baking soda2 tablespoons maple syrup1 teaspoon vanillaPinch of salt1/2 cup semisweet chocolate chips1/2 cup slivered almonds (optional)
MethodPreheat oven to 350 degrees. Grease a baking sheet with butter and set aside. In a large bowl, stir almond butter and sugars together until well combined. Add egg, baking soda, maple syrup, vanilla and salt and mix well. Stir in the chocolate chips and almonds if using.
Using a teaspoon, scoop out small amounts of dough and roll them to form a ball. Place on cookie sheet about 1 inch apart. Bake 10 to 12 minutes, until lightly browned. Cool for 5 minutes.
