Evergreen Veg

Evergreen VegAs the name suggests, its a greeny healthy vegetable recipe.It's very healthy and tastes yummy too.
Servings: 4 persons
Preparation time: 15-20 mins
Cooking time: 15 mins
Ingredients:
Capsicum (Finely chopped) : 2
Cauliflower (Finely chopped) : 1 cup
Cabbage (Finely chopped) : 1 cup
Carrot (Finely chopped) : 1 cup
Green Peas (Fresh or frozen) : 1/2 cup
Milk : 2 cups
Salt : 1/4 tsp 
Cheese cube : 1
Butter : 4 tbsp
For Masala:
Mint Leaves (Pudina) : 10-12
Coriander Leaves: 1 cup
Green chillies: 4
Ginger Paste: 1 tsp
Onion (Boiled) : 2
Tomatoes (Boiled) : 4
Yoghurt (Dahi) : 2 tbsp
Garam Masala : 1 tsp
Cumin Seeds : 1/4 tsp
Cardamom Pods : 2
Whole Black pepper : 4-5
Cashew-nuts: 10

Method:
1. In a pressure cooker take capsicum, cauliflower, cabbage, carrots and peas. Add 2 cups of milk + 1/4 tsp salt. Pressure cook the vegetables for one whistle or you can boil the vegetables in microwave for 7-8 mins.

2. In a mixer, take mint leaves, coriander leaves, green chillies, ginger paste, Onions, tomatoes, dahi, garam masala, cumin seeds, cardamom pods, whole black pepper and Cashew-nuts. Blend them to make a fine paste. Keep aside.

3. Heat butter or ghee in a pan, add the above masala (step#2). Cook it on low flame for about 5 mins. 

4. Add the pressure cooked vegetables to the masala. Mix them well. Cook it on low flame for 5 more mins.

5. Add salt to taste and grate cheese.

6. Garnish with mint leaves and tomato flower or slices. 


7. Serve hot and enjoy !!!

Handy Tips :
# Instead of fresh mint leaves, dried mint leaves can be used. 
# To make the dish more rich in taste, you can add paneer also.
# As its a green colored sabzi, we are not putting turmeric powder.
