About Eggless banana cake :

Eggless banana cake contains easy ingredients which you can get normally in your pantry. I have used ripened bananas to make this cake. I have added some walnuts and choco chips to make the cake more interesting. But you can make it as plain to enjoy with your tea or coffee.

When you set all the ingredients ready, this cake is very simple to make. Just mix the wet and dry ingredients together and bake it in a pressure cooker for 50 mins to 1 hour.

How to make eggless banana cake in the oven.

The same preparation method applies for making in the oven as well. First preheat the oven for 10 mins at 180 degrees. Then after preparing the cake batter, bake it in convection mode for 30 to 40 mins at 180 degrees. Then you can check using tooth prick whether the cake is completely done or not.

How to set the pressure cooker?

The gasket and the whistle lid is not needed to bake in a pressure cooker. Only the bottom and the lid cover is needed. Fill the bottom to 1 inch with salt or sand and cover the lid. Preheat in low heat for 10 mins before placing the cake tin. 

Choice of bananas: Use ripe bananas to increase the flavor and sweetness to the cake. Also mash the bananas properly before adding it to the cake batter. This will give an even and smooth texture to the cake. You can use a wire whisk or potato masher to mash the bananas.

Baking pan: choose the right size of baking pan to fit in the pressure cooker and make sure that after filling the cake batter in the tin, 1/4th space will be left for rising. Then grease the tin with butter and dust the floor. Or you can use parchment paper to avoid sticking.

Preheat: place steam wrack or any wrack inside the pressure cooker over sand or salt and preheat it in low flame for 10 mins for even baking

Ingredients to make banana cake without egg:

Banana : use any variety of banana and make sure it is ripened well. Like some dark spots over the skin.

Maida : all purpose flour /  maida / cake flour can be used to make the batter for moist and soft cake.

Dry ingredients: baking powder, baking soda and salt of any brands and good quality to be used.

Choco Chips and walnuts: Addition of choco chips and walnuts is optional.

Ingredients Measures:

  • Banana – 1 no (fully ripened)
  • Sugar – ⅓ cup
  • maida/ all purpose flour – ¾ cup
  • Baking powder – ½ tsp
  • Baking soda – ½ tsp
  • Salt – ⅛ tsp
  • Milk – ¼ cup
  • Lemon juice – ½ tsp

To garnish:

  • Walnuts – 1 tbsp

How to make Eggless banana cake in pressure cooker:

  1. In a pressure cooker fill with sand or fine salt to 1 inch level and heat the pressure cooker in low flame for 10 mins and make ready the batter.
  2. Mash 1 ripened banana in a pressure cooker using a fork.
  3. Add sugar and oil to it and mix well until the sugar dissolves and oil combines every other ingredient.
  4. To that sieve 3/4th cup of all purpose flour,baking soda, baking powder and salt.
  5. Fold the ingredients with spatula without vigorous mixing.
  6. Now add the milk in batches and mix.
  7. Finally add the lemon juice and give it a mix.
  8. Grease and  line a parchment paper on the cake mold or dust with flour.
  9. Transfer the cake batter to the mold and sprinkle chopped walnuts or any choice of nuts or dry fruits
  10. Gently tap the mold for 2 times to remove the air if any.
  11. Place it in a tray or stand in a preheat pressure cooker.
  12. Close the lid without a casket and don’t whistle.
  13. Keep the flame low and bake for 45 mins.
  14. After 45 mins, check with a skewer  by inserting in the center. If it comes out clean, the cake is done.
  15. Remove from the mold and cool the cake.
  16. Cut and serve with tea or coffee.

Yes you can add eggs. But the measures and ingredients should vary while adding eggs.

Banana itself is a very good substitute for eggs. Other than bananas you can use silken tofu, apple sauce, yogurt, buttermilk or any commercial egg substitutes which are available in the market.
