Easy Vegan + Gluten Free Breakfast CookiesHappy Monday! Things have been crazy over here. In case you didn't notice.... we made a big move to Kauai, and the last few weeks we have been traveling to the East Coast to tie up lose ends. It will be well into March before our household goods arrive! So for now, it is minimalistic living for our family. But who needs material possessions when there are gorgeous beaches and palm trees everywhere??

With things being so hectic over here, I am all about creating fast easy recipes with as few kitchen items as possible. Partly because I am lazy, and partly because my kitchen is empty! These cookies are not only easy, they are quick to make with one bowl, and the mix ins are endless! They are satisfying, filling, and they taste good. Did I mention they are Gluten Free and Vegan??

They are the Perfect breakfast cookie as you run out the door or for a healthy afternoon pick me up. The kiddo loves when I sneak a few in her lunch!

Easy Vegan and Gluten Free Breakfast Cookies

Ingredients:

3 Ripe Bananas mashed

1/4 C. Chia or Flax Seed Ground

1/4 C. Nutiva Coconut Oil {Room Temperature}

1/4 C. Unsweetened Shredded Coconut

1/4 C. Nutiva Manna {Can sub out reg Coconut if need be}

1 1/2 C. GF Oats

1/3 C. Chocolate Chips {Use Enjoy Life for Vegan Option}

Directions:

Preheat oven to 350. Oil two baking sheets {I use a little bit of Coconut Oil}.

Combine Mashed Bananas, Coconut Oil, Manna in large bowl. Stir well. Add in Ground Chia or Flax Seed. Gently Stir in Oats and Chocolate Chips last. Spoon onto greased baking sheet. I found it easiest to use a spoon to scoop and then gently slide the cookie with my finger onto the baking sheet.

Bake at 350 for 12-14 minutes depending on oven and size of cookies. The coconut will look golden when done. Store in airtight container for optimum freshness. Enjoy!
