Easy No-Bake Strawberry Cheesecake

Good day darlings!  I made cheesecake yesterday.  I am so excited to share this recipe with you.  I love making this with or without a special occasion at our home.  I do not know about you, but there is something about cakes and ice cream that makes me happy. :)  I just finished a huge slice and my happiness is now off the charts.  This is my yummy remedy if I am having a tough day.  Just a slice or two and my stress *poof* all gone! Let's start by gathering our ingredients.
1.  A small can of condensed milk
2.  All-purpose cream
3.  Unsalted butter
4.  A block of cream cheese
5.  Strawberry jam/preserves
6.  Oreo cookiesEasy No-Bake Strawberry CheesecakeFirst, we will make the base of our cheesecake.  Get a pack of Oreo cookies and place it in a clean bowl.  Get a clean glass and start crushing the cookies using the bottom of the glass.  You can also crush your cookies using a food processor or by placing it in a Ziploc bag and smashing it with a rolling pin.  Let your anger and frustrations out.  I love doing this with the glass method though because I love those chunky bits and pieces that I could bite on my cheesecake.Easy no-Bake Strawberry CheesecakeOnce your done crushing the cookies, add a tablespoon or two of melted butter then mix thoroughly.  We are looking for a sandy consistency.  Test your mixture by squeezing some on your hand.  The mixture should stay intact like wet sand.  Add more butter if necessary.Easy no-Bake Strawberry CheesecakeNow, get your mold and line it with cling wrap.  Lining your mold would make removal of the cheesecake from the mold a piece of cake later.   Place your cookie mixture evenly on your container and press it down using the back of a spoon.  We will now need to refrigerate our base to harden it while we are making the filling for our cake.Easy no-Bake Strawberry CheesecakeIn a separate clean bowl, add your room temperature cream cheese, all-purpose cream, and condensed milk.  Mix homogeneously until well combined.  For this recipe, I used a brick of cream cheese (250 g), 2 boxes of all-purpose cream (250 mL each), and one small can of condensed milk (168 mL).Easy no-Bake Strawberry CheesecakePour your filling on top of your base.  Now all you have to do is place it back in the fridge and wait.  I think this is the hardest part of this recipe, the waiting game, but it would be all worth it once we are done.  Just place your cheesecake in the fridge for about and hour or two (in a freezer) or three to four hours or best overnight (in the chiller).  Just check on it once in a while to see if the filling is firm enough to slice.  I do not think you can guess how many times I opened our fridge waiting for this to set. Sooo excited!  Haha!Easy no-Bake Strawberry CheesecakeOnce the filling is firm enough, slice your cheesecake and top it with jam.  I happened to have strawberry jam lying around so I used it.  You can also the traditional cherry or blueberry filling if you want.Easy no-Bake Strawberry Cheesecake
