Do you like pancakes? Of course not all pancake recipes are paleo-friendly, but this one is. We are combining eggs, banana and spices to make it, along with a little baking powder – and presto now you have paleo pancakes!  Use ripe bananas for these, even over-ripe ones, and feel free to swap the cinnamon for nutmeg or the vanilla extract for almond extract or another kind.

When cooking these, keep them small, because big ones are more likely to break, given the ingredients we are using. The following banana pancakes recipe serves one, but it’s easy enough to double or triple if you’re feeding more people. You can expect a light, fluffy result, and a really good flavor. In fact, you might even prefer these over conventional non-paleo pancakes. They are certainly quick and easy to prepare!

Serve the pancakes with fresh fruit, or perhaps with some honey drizzled over them if you want a touch of sweetness. You could even serve these with bacon, sausage, steak, roasted tomatoes or anything else you wish to add to the plate. It just depends how much time you have, and what you are in the mood to eat first thing in the day.

What You Need:

2 eggs

1 1/2 large ripe bananas

1/4 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/8 teaspoon baking soda

How to Make Them:

Beat the eggs in one bowl, and mash the bananas with a fork in another bowl. Now add the eggs to the mashed bananas, along with the cinnamon, vanilla and baking powder. Stir to combine.

Pour 2 tablespoons of the batter on to a skillet and cook for a couple of minutes or until golden brown on the bottom, keeping the heat medium-low. Flip and cook the other side. Repeat with the remaining batter. These are good served with fresh fruit on the side.
