Curried Coronation Potatoes

So i may have had a slight hangover one day and fancied something with a little spice, lots of carbs and minimal effort. This is what resulted. It’s kind-of coronation inspired because of the curry powder and mango chutney, and I love that it just all goes into a tin foil bag. The tin foil bag also does something really nice to the cheese, it keeps it soft and melting, rather than toasted. You could experiment with different flavours; red onion, taleggio and thyme would be perfect with lamb.

Even better if you were having guests as you could do little individual bags of these potatoes for everyone.

Serves 2

♡ 2 large rooster potatoes, cubed
♡ half bunch of spring onions, chopped
♡ 1 tbsp curry powder
♡ 2 tbsp mango chutney
♡ 50g strong cheddar, grated

1. Put the potatoes into a bowl with the onions, curry powder and chutney and stir well.
2. Make a tinfoil bag by laying two sheets of heavy duty foil in a cross. Place the potatoes in the center and start to seal the bag up around them. Before fully closing add a splash of water to the potatoes.
3. Place in a preheated oven for about 45 minutes or until cooked. Open the bag, add the cheese and reseal before placing back in the oven for 5 minutes.

You needn’t worry about a plate…..
