Cornish Hens with Mango Avocado Salsa for #MothersDay #HealthySpring #KitchenIQ

When I was invited to do this giveaway, it was determined we would be calling it Healthy Spring and most of the posts are vegetarian and/or vegan – but this girl was raised around farm animals so healthy means eating chicken instead of beef or pork. Staying true to who I am – I decided on a Mother’s Day lunch of Cornish hens with rice, and my mother loved it! The giveaway is sponsored by KitchenIQ who sent me several lovely products to try out and then tell you about. They have fabulous usable products – one that has changed how we prepare food for Rocket.  I will show you a little later in the post.  When I first started cooking, I had cheap baking sheets but figured out nice ones made all the difference. Then I learned the same about pots and pans and now I clearly see the difference in a sharp and dull blade on a knife or zester. I want to show you about all the products, but first the recipes:

First, prepare the Cornish hens

Ingredients:

2 Cornish hens washed and patted dry

1 lemon

3 cloves garlic

2 Tablespoons Olive Oil

¼ teaspoon chili powder

¼ teaspoon cumin

Coarse salt and pepper

Directions:

Preheat oven to 425F or 220C

Rub the lemon all over the chickens then slice some off and stuff into birds with garlic cloves

Drizzle olive oil over birds.

Sprinkle birds with chili powder, cumin, salt, and pepper

Place on rack in shallow baking pan.

Bake 15 minutes at 425F then turn oven down to 350F and bake for 30 minutes longer or until lightly browned and meat temp is 180F internally.

Done!

Now for the Mango Avocado Salsa.

Ingredients:

1 Mango

2 Avocados

1 Jalapeño

1 small onion

2 cloves garlic

1 lime

3 dashes tequila

Directions:

Juice Lime

Cut Jalapeño finely

Smash garlic cloves

Dice red onion, mango, and avocado

Toss all ingredients with lime juice and tequila.

Serve immediately – with chicken, or crab, or shrimp!

Now you have the Cornish hens and the salsa so make yourself some sticky rice and place all on a platter – then enjoy a lovely Mother’s Day Lunch!

KitchenIQ is a great company that gave me several items to try out – my favorite?  The Pizza Cutter sharpener, have you heard of one?  I had not:  This thing works like crazy!  I could not believe it would make a difference in cutting pizza but it cut like warm buttah.  Seriously!  In fact, if you are a young mother (or grandmother like me) you have seen one of these

used to cut up children’s sandwiches and pizza pieces and they work well but cleaning them is horrible!  All you need to do is sharpen up that pizza cutter and cut kids or older adults’ fruit, pizza, sandwiches, toast, bacon, ham – whatever you have, this thing will slice right through it.  This pizza cutter is 9 years old too!

I got a zester too – I have never had any luck with one, they were just never sharp enough but this one is!  It catches what you are zesting into a little vessel in the back where it even measures for you.

One other item – see this?  It is a manual scissor and knife sharpener and it not only sharpens regular scissor it sharpens LEFT-HANDED scissors too!  And, who do you know that is left-handed?  ME!!
