Coconut Water Mojito Mocktails - A perfect healthy treat for an evening or the next morning!

Other than the occasional smoothie, I don’t think I’ve shared any drinks recipes on here before so this coconut water mojito mocktail is something a little different. I can’t say I really make any particularly special drinks at home… which explains the lack of recipes! However, since for this year’s new year’s eve we’re having a few friends over so I couldn’t resist already starting to think about possible cocktails to make.

As much as I’ve got a sweet tooth elsewhere, cocktails are one thing I don’t like to be too sickly. Mojitos have to be one of my favourites as they are still refreshing even after you’ve had a few. But when I started contemplating mojito recipes at home it occurred to me what a perfect combination the flavours of mint and lime are anyway – so why not create an alcohol-free mojito that can be drunk at any time of day!?

This coconut water mojito is perfect in the evening, for occasions when you don’t want to drink alcohol (or if you don’t drink alcohol at all) but still want something fancy and delicious. It’s possibly even better as a morning after drink – refreshing and super hydrating.

I’ve kept the sugar to a minimum, but you could skip it if you prefer for a truly healthy drink. Without the sugar though you would lose that characteristic mojito flavour the hint of caramel it gives the drink when mixed with the other ingredients.

Of course this coconut water mojito can easily be made into an alcoholic version too with the addition of a dash of high quality rum. Whilst I can’t promise you won’t get a hangover from drinking it with rum, as it is made with coconut water (I used my favorite variety – Vita Coca 100% natural coconut water) and low in sugar, it should be a little kinder to your body than a typical mojito!

  • ½ lime, cut into three wedges
  • 2 springs fresh mint
  • ½tsp unrefined sugar
  • 2 cubes ice
  • 100ml coconut water
  • 100ml sparkling water
Method
  1. Add the lime wedges into the glass, squeezing as you do. Slap the mint leaves on the back of your hand a few times and add them to the glass too. Add in the sugar and "muddle" using a narrow rolling pin or the end of a wooden spoon (or something along these lines!).
  2. Add the ice, coconut water and sparkling water to the glass. Stir gently to mix and serve.
