Classic Combo’s ~ Roasted Caprese Pasta Salad

Roasted Caprese Pasta Salad
Sometimes the simplest of combos = pure flavor heaven.
With no beating around the bush, their true flavours are able to sing loud and proud.
Allow me to demonstrate via words…

Think:
- raspberries & coconut (a personal fave)
- lime & chilli (yet another treasured union)
- oats & honey (as seen in these Oat Honey Bars and this Camomile Honey Oat Cake)

Getting me a lil’ better?
Pretty much these well-loved combos are as close to as fool-proof as you can get (apart from your Mama’s most regular home made meal… well… that’s pretty much inbuilt into our cooking memories, amma right or amma right?)

Well, nothing seems more classic and foolproof than the one and only Caprese Salad.
Let me lay it out for you… it’s pretty damn complex…..

But it’s time this easy lovin’ combo got a yummy mix up…
We’re gonna roast our tomatoes with some added zucchini and onion, toss it through some pasta and drizzle with some balsamic for good measure.

Soundin’ pretty swell?

Wait till you cook it! (and better yet taste it)
It is literally one of the simplest meals to whip up!
Followed by some serious chowin’ down..

Shall we get down to business?
Lets…

ROASTED CAPRESE PASTA SALAD
recipe adapted from ‘The Little Red House

Ingredients:

450g cherry tomatoes, halved
1 zucchini, thinly sliced 1/4 red onion, sliced
2 handfuls of mozzarella (I buy the fresh logs of mozzarella and dice it for this recipe) olive oil (enough to coat vegetables) salt and pepper 250g casarecce pasta
finely chopped basil leaves
balsamic vinegar
Method:

 Preheat oven to 450°F (230C)

Toss tomatoes, zucchini and onions in olive oil and salt and pepper.
Spread out on a baking sheet and roast for about 20 minutes.Cook the pasta according to packet instructions.Combine roasted veggies with cheese, basil, pasta and a splash of balsamic vinegar.
Enjoy!

—Upon cooking this, I had an afterthought of adding garlic with the veggies for roasting to add extra flavor.
