I got this meringues poo idea from my colleague! She told me that her daughter love watching Rosanna Pansino from Nerdy Nummies baking meringue at this YouTube video. Rosanna Pansino? She is the girl in "Dessert" music video with Dawin and Silento. When the video was released in late 2015, my son and I used to dance a lot along with this video... LOL!
I love to bake meringue poo that Rosanna baked in her video but instead of using her meringue powder recipe, I prefer to use another recipe that uses the real egg whites to bake my poo!

To start, I beat the egg whites until frothy and then I added the cream of tartar.

Increase the beat speeding to medium high and add caster sugar 1 tbsp at a time.
Keep adding and beating until the egg whites are stiff and glossy like this.

Add cocoa powder and use a spatula to fold in the cocoa powder very gently!
Do not over-mix! It is ok if the cocoa powder looks streaky!

Although there is cocoa powder in the meringue, it will still look pale in its color.
And you will need to add adequate brown colouring gel to make the meringue look like brown enough to look like poo!

Next, pipe the meringue into poo shapes and bake in a cool oven for about 2-3 hrs!

While baking, I rolled the fondant and cut them into shapes. These are the eyes and mouths for the poo.

My son said the poo look cuter without the mouth... Agree! So our meringues emoji poo are mouth-less :)

I laughed hysterically again.
My husband's face was like OMG... LOL!

Here's the recipe that I have mostly adapted from Food Network.
Makes about 30-32
3 egg whites, 105g in total
1/4 tsp cream of tartar
3/4 cup (150g) caster sugar
10g cocoa powder, preferably Dutch processed (I used Valrhona)*

adequate brown colouring gel

*Please do not add more than this amount of cocoa powder. I have tried to use 4 tbsp as mentioned in the original recipe before but kill the meringue eventually!!!
Preheat oven to 200°F or 95°C. Line baking trays with baking papers.

Using an electric mixer with whisk attachment with medium low speed, beat egg whites until frothy for about 5-7 mins. Add cream of tartar and continue to whisk in medium low speed for 1-2 mins until the cream of tartar is incorporated.

Increase whisking speed to medium high, add sugar 1 tbsp at a time while beating and continue to add and beat until the egg whites are stiff and glossy. 

Add cocoa powder and brown colouring gel. Using a spatula, fold cocoa powder and colouring in very gently and it's ok if the meringue looks a little streaky... better than killing the entire meringue!

Transfer egg white mixture into a pastry bag fitted with a large round nozzle (Wilton 1A). Pipe meringue on the prepared baking tray with about 5 cm / 2 inches apart. Bake in the middle of oven for 2 hrs 30 mins or until the meringues are well set and completely dry. Turn off oven and leave the meringues in the oven for at least 2 hrs or until meringues are completely dry.

While baking, roll white and red fondant into thickness of 0.5 cm and cut them into small heart (love struck eyes) and circle (like normal eyes) and triangle shapes (for the mouth). Roll small pieces of black fondant into balls and place them onto the white circle fondant (to make the normal looking eyes) or use an edible black marker pen to draw on the white circle (to make sleepy, suspicious or other eyes with expressions).

To assemble, use a fine brush to add very little amount of water at the back of the eyes and mouth fondant pieces and stick them onto the meringue.
