Chinese Bhel

Break the noodles on a plate.
In a pan,heat water with little oil and salt. When the water starts to boil,add noodles.
Cook the noodles till done.
Now switch off gas and drain water. Now run cold water over noodles.
Place the noodles in a bowl,add little oil,maida,cornstarch and mix well.
In a deep fry pan,add oil and heat it.
When its hot add noodles in batches and fry them till golden brown and crispy.
Drain them on an absorbent paper.
When cooled store them in airtight container.
In a pan add oil,when hot,add ginger and garlic.
Fry for a minute,add all veggies except few scallion greens. Reserve them for garnishing.
Add salt and fry for sometime on high flame.
Now,reduce the flame to medium and add sugar,all sauces and vinegar,add water and cook till it thickens.
Keep it aside.
Now to serve,in a bowl or plate,place the noodles and pour the vegetable sauce as per need,add scallion greens and sesame seeds, toss the noodles a bit in sauce.
Serve hot and enjoy!!
