Cheesy Leftover Mashed Potato Waffles

Weekends are meant for relaxation and you really don't want to be slaving over a hot stove. If you can't face getting ready to go out for brunch, this is for you. Leftover mash (or as we used Scotty Brand Cheddar Mash) with really whatever is in the fridge. We had some ham and red pepper leftover so added that to the mixture. Almost looks like something we'd order when brunching out!

Cheesy Leftover Mashed Potato Waffles Cheesy Leftover Mashed Potato Waffles

Ingredients

1 pack Scotty Branch Cheddar Mash (400g of mashed potato)
30g panko crumbs
50g grated cheddar cheese
5 Spring Onions
2 eggs, lightly beaten
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1 tablespoon chopped fresh chives
sour cream

Method

Preheat waffle maker and grease with cooking spray.
Combine all of the ingredients, except for the sour cream, in a large mixing bowl.
Add around a heaped tablespoon of mixture to each waffle iron.
Cook until brown on top.
Remove from waffle maker and top with some cheese.
Repeat with the remaining batter.
Serve the potato waffles with sour cream and fresh chives.
Mr Foodie added some crispy onions as well for extra onion-ness
