I realized the other day that I haven’t shared one appetizer recipe for this entire year. Um, I guess I got a little carried away with the chocolate and cookies, as per usual.

But with the holidays coming up and quick and easy appetizers being in high demand, a scrumptious holiday appetizer was in order – especially because this is the season for baked brie, one of my favorite holiday treats

Christmas is really the only time my family ever really has baked brie, which is tragic. Gooey melty cheese should be enjoyed year round, but I guess if there’s ever time to really go for it, it’s the holidays.

So this year, baked brie is getting a sweet twist. Apples are so well paired to brie – their tart sweetness plays off well with the earthy, savory flavor of the brie. The caramel apple topping piled on top of this baked brie makes a usually delicious appetizer truly exceptional (if I do say so myself).

Bonus: it’s also so easy to make, with just 5 ingredients and only about 20 minutes needed from start to finish. It can even be prepped ahead of time to ease up your day-of work!

I baked mine in a cast iron skillet for two reasons: 1) it’s cute, 2) it contains the oozing, gooey cheese nicely without making a big old mess. Of course, you don’t have to make it in a skillet at all, a parchment-lined baked sheet will do the trick just fine! But if you’ve got a mini skillet, now’s the time to break it out.

I cut the rind off the top of the brie, leaving a bit of a border around the edge so things didn’t get too gooey – this is optional, but it makes it a little bit easier to eat. The brie goes into the oven to get melty, and meanwhile, caramel apple things are happening on the stove.

The topping is super simple – apples are sautéed in a pat of butter, and then some of T-Sugars Belgian Cassonade Sugar. The sugar melts down with the butter and apple juices and forms an irresistible dark caramel sauce. Once the apples are tender and the all the sugar is dissolved, you’re golden.

Add in the pecans for some crunch, grab your melty brie from the oven, and add that caramel apple topping all over the top of it. Gooey, melty, cheesy, apple BLISS, am I right? Serve it warm with thick apple slices (I recommend Granny Smith to add some tartness), crackers, or some bread. Warning: it probably won’t last long. Enjoy!

  • 1 wheel brie cheese (about 7 oz.)
  • 1 tablespoon butter
  • 1 apple, cored and diced into small cubes
  • ⅓ cup Cassonade sugar
  • ½ cup pecans, toasted and roughly chopped (can sub in your favorite nut)
  • Apple slices, crackers, and/or baguette slices
Directions
  1. Preheat the oven to 350°F.
  2. If desired, remove the top rind from the brie for easier eating. Place the wheel of brie in a 6-inch cast iron skillet or on a parchment-lined baking sheet.
  3. Bake in the oven for 10-15 minutes, or until the brie wheel is gooey.
  4. While the brie is baking, make the caramel apple topping. Melt the butter in a saucepan over medium heat. Add the diced apples and sugar and stir to combine. Stir frequently for about 5-8 minutes or until the apples are tender and a caramel-like sauce has formed. Stir in the pecans.
  5. Remove brie from the oven and add the caramel apple topping right on top.
  6. Serve immediately with apple slices, crackers, baguette slices, or whatever else you’d like!
Notes You can substitute coconut sugar or regular brown sugar for the Cassonade sugar.
If you want to prep this ahead of time, you can make the caramel apple topping and put it on the brie, and then put it all in the oven to heat when you're ready to serve. 3.5.3226
