Cappuccino Rice Krispie Treats

The hardest part about this recipe was naming them. I started with Cappuccino Krispies and had a fleeting moment of considering Kappuccino Krispies but if you knew how much I detest that whole 'K' clan you would get why I didn't go there! Still, bottom line, they are made in the image of the treats we all know and love and I settled on Cappuccino Rice Krispie Treats...they are truly an adult version of a favorite kid treat.

Why Cappucino? Why not I say! Funny, I saw another food blogger mention today how she runs out of ideas and solicited help from others on where to get inspiration. I had to chuckle when 'inspiration' for many comes from checking keyword searches to find popular topics and then a recipe is devised to catch that attention. So not me. I have more ideas than I have time. I don't limit myself to baked goods or low fat or gluten free so the choices are wide open. One day steak, another a kids treat...just like real life in my kitchen.

My neighbor Amy follows a GF diet and it was her birthday and her mom had told me how much she loved Rice Krispie Treats...she even opted for her wedding cake to be made out of them when she got married years ago so I had them in mind for her. I'm trying to recall what inspired me to go this direction and I think it was as simple as seeing my dry espresso in the pantry next to marshmallows and I was off and running.

Marshmallows and butter are the basics but I've added some of that dried espresso along with chocolate and cinnamon all drizzled with white chocolate in my attempt to mimic the designs that baristas like to 'draw' in cappuccino drinks. They turned out to have a great blend of flavors while still being easy to make. I honestly made these for adults because of the espresso so if kids will be enjoying them too I might cut back on it a bit. Might be a buzz kill if they result in wired kids!

Were they good? They disappeared fast. I had to make them a second time to get these photos and lo and behold...I was shy on the Rice Krispie part. I opted to add some Cinnamon Toast Crunch cereal instead of making a trip to the market and loved these too; I just omitted the cinnamon in the recipe. Maybe not good for those following a gluten free diet but I had plenty of takers. If I had to choose? Either. Both. A really fun way to kick the treats up a notch without the effort of a real grownup dessert. Doesn't everyone love Rice Krispie Treats? Trust me with some espresso and chocolate...they are even easier to love!
