Cajun Slow Cooker Chicken

Now you can make great spicy, juicy chicken with little or no effort. Cook it in your slow cooker then place the whole thing under the broiler to crisp up the skin. It is easy peasy delicious!IMGP9786

I got this new slow cooker that is like a casserole dish. I use it for all sorts of things except cooking a whole chicken. I have seen them but was kind of skeptical. I love the crispy skin a roast chicken has and to be honest those oval ones do not look crispy.

Mine did not get crispy until I put it under the broiler. The best part is you can cook the whole bird and make it very juciy in the middle along with wonderful cooked veggies. Then put it under the broiler for a few minutes and you have a crispy skin and your veggies get crispy too.

I have been meaning to cook a whole bird in this new slow cooker for some time, but to be honest, I did not think it would fit.  I bought a 3-5 pound roaster and it fit perfectly. The best part is that the insert goes from slow cooker to oven with ease.

I also love the spices they are reminiscent of the trip the Hubster and I took to  New Orleans for our 20th wedding anniversary in October.

Cajun Slow Cooker Chicken

Ingredients:

Rub for the chicken
1/4 cup dark brown
2 tablespoons pariksa
1 teaspoon chipolte chili pepper
1 teaspoon cocoa powder
1 teaspoon garlic powder
1 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano

For the slow cooker
1 cup chopped onion
1 lemon quartered
2 cups chopped peeled sweet potato
4-5 pound roaster chicken

Directions:

Combine rub ingredients in a small bowl and set aside.
Remove inside package from chicken rinse and pat dry. Rub spice all over the chicken. Place chicken in slow cooker and place half the onion and lemon inside the cavity of the chicken. Toss the rest of the onion and the sweet potato all around the chicken. Cover and set the slow cooker on high for 4-8 hours until chicken is done (160 degrees) and potatoes are soft. Time of doneness depends on how big your chicken is.

Remove the insert from the slow cooker and place under the broiler for 5-6 minutes to crisp up the skin.
