Buttermilk Buckeye Bars #chocolateparty

This months Chocolate party is all about buttermilk.  I kind of had to think hard on this one.

I started off making this zebra cake with buttermilk. The ingredients called for baking soda and I used baking powder. What I ended up with was a big zebra biscuit. I will make that recipe,  the right way in another post.

I then thought about perhaps a brownie with buttermilk. Then I thought about the buckeye candy. With the chocolate on the outside and creamy peanut butter in the middle.  I should make that into a bar. So I decided to make a brownie using buttermilk and add the buckeye filling and swirl it around.

There is an expression about the best laid plans.  Yeah, in the real world that almost never happens.

Anyway, the batter for the brownies was a bit thin so when I added the peanut butter mixture it sort of sunk to the bottom.  I put half of the peanut butter mixture in my brownies and the rest went in the fridge.

I put my brownies in the oven and waited patiently (well as patiently as I could)  to see how they came out.  When I pulled them out of the oven, the peanut butter did sink to the bottom.  So, I waited for them to cool and put the rest of the peanut butter on the top as a rustic frosting of sorts.

So that is how my Buttermilk Buckeye bars were born.

They ain’t pretty, but they sure do taste good!

Buttermilk Buckeye Bars

Ingredients:

1/2 cup softened butter

3/4 cup peanut butter

1 cup confectioners sugar

1/2 teaspoon vanilla extract

2 cups all-purpose flour

2 cups white sugar

1 teaspoon baking soda

1/4 teaspoon salt

1 cup water

1 cup butter

1/3 cup unsweetened cocoa powder

1/2 cup buttermilk

1 1/2 teaspoons vanilla

Directions:

Preheat oven to 350.

In a medium bowl combine butter, peanut butter, sugar and vanilla. Beat until smooth.

Grease two 9 x 9 inch pan or one 13 x 9 inch pan.

In a medium bowl combine flour, sugar, baking soda and salt.

In a medium saucepan combine the water, butter and cocoa powder. Bring to a boil then remove from heat. Add the hot mixture to the flour mixture and combine. Add eggs, buttermilk and vanilla. Continue beating another minute or so, until everything is incorporated.

Pour batter into prepared pan. Drop by spoonfuls half of the peanut butter mixture into the chocolate batter. Swirl with a toothpick. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool completely before frosting with the remaining peanut butter mixture.
