When we moved I did a full review of our spice cabinet and discovered a few that had to go and 3 different kinds of curry. And I really don’t even use curry that often. That had to change.
On one of my trips lately I had a grain salad with a curry grilled chicken. It was seriously delicious and I needed to create something similar. I actually think my version was even more delicious (I am biased). A perfect dish for a summer evening, a bit cool but still nice enough to break out the grill and sit outside. I need more of those evenings!
Bombay Chicken Salad

6050594Ingredients (Serves 4)
Salad
- 1 tsp curry (hot or sweet)
- 1/4 tsp sugar
- 1/4 tsp cumin
- Salt/Pepper
- 1 lb chicken breasts
- 1 cup Trader Joes Harvest Grains (or any grain)
- 1 mango, diced
- 1/2 cup dried cranberries
- 1 green onion, finely diced
- 1/4 cup sunflower seeds
For the Dressing
- Juice of 1 lemon
- 1/4 cup olive oil
- 1 tsp honey or agave nectar
- 1/4 tsp curry powder
- Salt/Pepper
Instructions
Combine curry powder, sugar, salt/pepper, cumin & chicken in a large plastic bag. Shake to combine. Grill chicken 5-6 minutes per side, or until cooked through. Cut into bite sized pieces.
Cook harvest grains and pour into a large bowl. Top with grilled chicken.
Whisk together lemon juice, honey, olive oil, curry powder, & salt/pepper. Pour over salad and serve.
