Big Boy Apple Pie Cupcakes

It's an apple cupcake. It's an apple pie. No, it's a big boy apple pie cupcake! And, it's perfect for breakfast. No, it's better as a dessert with some vanilla bean ice cream or whipped cream!

If you're entertaining and needs something that will be a stunning presentation, then this is your ticket. Prepare ahead of time, bake while you're having cocktails, then by the time dinner is finished, you can shimmy these big boys out and they're ready to serve.

Serve it right side up or upside down. It doesn't matter because it's purrrdeeee as a brown-speckled puppy either way!

Makes: 4 large cupcake pies
Preheat oven to 350

What you need:
1 refrigerated pie crust, rolled out and cut into four quadrants
2 cups skillet spiced apples & coconut,recipe here
12 thin apple slices
2 Tbl. honey
Cooking spray, canola

What you do:
Coat four openings of the large-size cupcake pan well with cooking spray. Take each piece of dough and mold into the opening.

Put equal amounts of the skillet spiced apples and coconut in each. Top each with three apple slices. Coat with cooking spray.

Bake in a preheated 350 oven for about 28 to 33 minutes. Remove and cool about 5 minutes. Meanwhile, put the honey in a small microwaveable bowl and microwave on high for 18 seconds. Using a pastry brush, coat the tops of each of the cupcake pies making a honey glaze.
