Best One Bowl Chocolate Cupcakes Recipe

I needed a quick cupcake recipe to make for Kid #2 to take to preschool. These one bowl cupcakes are so chocolate-y, moist, and fast to fix!

Paired with vanilla buttercream frosting, these are oh so memorable. I love that they make a big batch, too. It’s great to find a cupcake recipe that makes 24 cupcakes without having to double it.

This adapted recipe from PBS’ Kitchen Explorers was perfection! Because Kid #2 loves the Pinkalicious books, we put pink sparkly sprinkles over the tops. Kids at preschool asked if they could have more. I was so glad to hear that. I don’t normally test out new recipes without trying them first myself but I was in a pinch and these seemed like the solution. Yes, these chocolate cupcakes are a keeper!

Ingredients

• 1 3/4 Cup Flour
• 1 3/4 Cup Sugar
• 3/4 Cup Unsweetened Cocoa
• 1/2 teaspoon Kosher Salt
• 1 teaspoon Baking Powder
• 2 teaspoons Baking Soda
• 2 Eggs
• 1 Cup Milk
• 1/2 Cup Vegetable Oil
• 2 teaspoons Vanilla Extract
• 1 Cup Boiling Water

Instructions

1. 350* oven.
2. Line two muffins tins with paper liners and set aside.
3. Combine Flour, Sugar, Cocoa Powder, Salt, Baking Powder, and Baking Soda in bowl of electric mixer.
4. Add in the Eggs, Milk, Vegetable Oil, and Vanilla Extract until combined.
5. Pour in Boiling Water a quarter cup at a time, beating well between each addition.
6. Fill cupcake liners 2/3 full with the thin batter.
7. Bake 350* for twenty minutes.
8. Cool before frosting.
