Besan Ki Kachori

Perfect recipe of crisp,flaky Besan Kachori served with sweet date chutney!

Firstly, make the dough.Meanwhile make the stuffing.In a pan,add Gram Flour and all other ingredients mentioned for stuffing.Pinch dough ball and roll in a disc,about 3 inch wide and 1/2 cm thick.
In a mixing bowl,add all ingredients except oil and water to make dough.
Grind all the spices mentioned to form the spice mix,to a coarse powder.
Roast it for while till it gives aroma.
Place sufficient stuffing at the center.
Bring all the sides of the disc together and pinch to close the kachori.
Roll it further to form even disc.
Meanwhile heat oil,and when its hot,reduce the flame and slowly fry the kachori on low heat till golden brown and crisp.
Drain on kitchen tissue.
Serve hot with sweet date chutney.
Enjoy!
Keep aside to cool.
Add hot oil to the flour and mix well.
Rub it well between your palms.
It should hold together if you try to form a ball.
Next add warm water slowly,to form soft dough.
Keep it covered for sometime.
