I usually don't write about a recipe immediately after I make unless I have a date-line. Sometimes it takes me even a month or more to decide if it's blog worthy or not. There are times I see a recipe on another blog and run in the kitchen to make it. I've seen these bars last week on my friend Mandy's blog. They sounded so easy to make and I had everything handy.  I've already told and will tell you again : I love recipes that don't make me buy that special something that after using once I forget all about it.  I'm pretty sure most of you right now have in the house bananas, rolled oats, butter (I used vegan), honey (agave syrup works too) vanilla and cinnamon. That's all you need to make these bars. 6 ingredients!!  After mixing all the ingredients in a bowl you bake them for about 40-50 minutes. Give it 10-15 minutes in the oven and the smell of baked banana will cover your entire kitchen. I wish I could open the oven and start eating.I had to behave myself, otherwise I would be talking about something else right now :)) After they are baked, let them cool slightly before cutting into squares/bars. The bars are still soft, if you're looking for a crunchy bars these are not for you unless you substitute some of the oats (I'd suggest no more than 1/2 cup) with some chopped nuts. I think is the first time I paired cinnamon and banana together, but let me tell you, I have no idea why I didn't do it before. None of them is overpowering,  they complement each other so good making these bars disappear in no time, and by that I mean a couple of hours.
