Apple Pie Muffins

Apple pie MuffinsNo, I haven't mistyped. Today's recipe is Apple pie Muffins. I have already told you Tiffany doesn't like chocolate so all the time I'm looking for non-chocolate snack ideas. These muffins are adapted from a Australian baking cookbook.  From time to time I buy some cheap cookbooks just for the ideas. Some ideas are good but you have to work around the ingredients they give you. While browsing through the book my eyes laid on this muffin recipe and was intrigued by the addition of the pie filling to the batter. I've had finely diced apples added to the batter but not apple pie filling. I knew I had to make these and try the new silicone mold I have from my friend Sarah at SiliconeMoulds

First time I made these muffins I followed the recipe by the book and found them a little too heavy. This time I reduced the butter to 4 oz versus 5 as in the recipe and used just 14 oz apple pie filling versus the whole can. Also left out the vanilla and kept just the cinnamon, goes better with apples. This time they were just perfect. Not too heavy, not too greasy. They were light, full of flavor, moist and delicious. 
Apple pie Muffins  Tiffany loved them. I put half of them in the freezer and next time I'm short on snack just pop them in preheated oven for few minutes or a couple of seconds in the microwave.
Let's turn the oven on and make some Apple pie Muffins

Preaheat the oven at 400F. Grease and flour 16 Caneles molds In a medium mixing bowl sift together 2 1/4 cups of self raising flour, 2-3 tsp cinnamon and 2/3 cup light brown sugar.

In a measuring cup mix 1 1/3 cup milk with eggs.

Pour over the flour mixture and mix slightly.

Now add 4 oz melted but cooled butter

and in the end 10 oz apple pie filling chopped. Mix just until incorporated. Don't over-mix.

Pour the mixture into prepared molds.

and bake in preheated oven for 20 minutes.

Remove while still warm to hot and let them cool on a wire rack.
