People are forever asking how I manage everything with such a busy schedule. I love to cook, but I don’t always have time to do so in the manner I would like. This weekly journal is a way to keep it real and show that while my intentions are good, sometimes life and all of its activities get in the way of serving a delicious, home-cooked meal and that it is perfectly okay.

  • Saturday: I think Jim decided it was clean-out-the-freezer week, as he used up the last of the Thanksgiving turkey last week and used up the meat sauce I made for Christmas tonight. We threw it over pasta and added garlic bread for another delicious meal.
  • Sunday: Jim and Holly had dinner with Jim’s sister and her family. I stayed home and had leftovers. Considering the alone time I had with the dog, I think we both won on this deal.
  • Monday: Jim went fancy tonight with Maple-Dijon Panko Salmon. The salad dressing of the side salad was fantastic. I could really see the salmon flaked on top of the salad too as an alternative way of eating it. Either way, it was delicious.
  • Tuesday: It snowed in the middle of the night which meant it was a perfect time to grill burgers, and did they taste delicious! I don’t know why we stop grilling in winter.
  • Wednesday: In a completely uninteresting way, neither Jim nor I had dinner tonight. Late lunches and being busy for most of the evening meant neither of us were hungry or interested in doing anything for dinner.
  • Thursday: A new pup plus Holly’s dance class plus a manicure appointment for me meant there was not a lot of time for dinner. Jim threw together sloppy joes for him and me and left it at that. Sometimes you do what you have to do.
  • Friday: Tonight was a rare night where everyone was home at the same time. I actually cooked and made Jerk Chicken Thighs with beans and rice and a salad. This recipe made me realize I am not a fan of jerk seasoning, but Jim loved it. At least someone did!
