What’s For Dinner Button

I love to cook, but I don’t always have time to do so in the manner I would like. This weekly journal is a way to keep it real and show that while my intentions are good, sometimes life and all of its activities get in the way of serving a delicious, home-cooked meal and that it is perfectly okay.

- Saturday: Holly had her second annual dance team picnic complete with roasted pig. While Holly did not eat anything (because pig and pretty much all the sides had meat in them), Jim and I loaded up on roasted pulled pork, cheesy potatoes, and all sorts of sides. It was all delicious.
- Sunday: I pretty much spent the day in bed fighting off the same crud Jim had, so there was no formal dinner by anyone. I can’t even tell you what they ate, although I suspect a grilled cheese sandwich was had by someone.
- Monday: My stomach was upset after the many pain medications I pumped through my system over the weekend, so I was in no mood to cook anything. Jim made himself an omelet. Holly stuck with a tuna sandwich, while I ate a few cucumbers and called it a night.
- Tuesday: To make up for the lack of real food in recent days, I made enchiladas – beef for Jim, bean for Holly. I know Holly was really looking forward to me making this particular meal, so I was happy to oblige.
- Wednesday: The first non-rainy day in a week calls for something summery and what is more summery than BLTs? Made with good bread from the bakery with a fresh tomato and extra-crispy bacon, a sandwich does not get much better than that. Holly can keep her tuna salad or grilled cheese or peanut butter and jelly. More BLT for me.
- Thursday: Last week’s breakfast for dinner was such a hit that I wanted to do it again. This time, I went with homemade waffles because who doesn’t want dessert for dinner?
- Friday: Today, we finally celebrated Holly’s birthday with her friends. Dinner tonight was at a macaroni and cheese restaurant called Macs. An entire restaurant devoted to mac and cheese. That is what I call a little slice of heaven.
