For me Labor Day signals the end of summer. It seemed like I blinked and it was over.
A couple of weeks ago I made this drink and really enjoyed it.
Monkey Girl is the one who introduced me to agave. She was sick and had a sore throat. While we were in Trader Joe’s, they had some samples of tea. She sweetened hers with the agave and said it made her throat feel better. So I purchased the tea and the agave.
To be honest, I was thinking of a natural sweetener for this drink. I didn’t have honey and that was my first choice. The agave was in the cabinet and tried it. I am glad I used the agave though. If you don’t have agave nectar or don’t want to purchase it just for this recipe, you could replace it with a tablespoon or two of honey or Karo syrup.
Watermelon and Limoncello Coctail
Ingredients:
8 cups seedless watermelon
1/2 cup lemon juice
3 tablespoons Agave Nectar
1/2 cup Limoncello
Directions:
Working in batches purée in a blender watermelon and lemon juice and Agave. Add more agave if needed.
Transfer to a pitcher and add limoncello if desired. Cover and chill until ready to serve.
