Summer Crunch !!!

After last weekend’s “warm-wave” in London, our tame version of what everyone else calls summer is here, and what better way to enjoy the occasional sunshine than with a crisp, fresh and yummy juice?! This short post highlights one of my favorite juice recipes, the ‘Summer Crunch’ using spinach, raspberries, blueberries, cucumber and lime. I’ve always loved juices – they’re a great way to give your body a direct dose of vitamins, minerals, enzymes, plant-based protein and fibre without the body having to work hard at breaking it down. It’s a fabulous way to boost your energy levels and immune system. I aim for real, organic, unprocessed fruits and vegetables for the peak nutritional intake. Where possible, the majority of ingredients should come from plant based produce, as some fruits can cause blood sugar spikes (with no fiber to slow process of metabolism); low-GI produce which is full of goodness is the holy grail of juicing!

I made my juice by taking my new NutriBullet Pro900 for a whirl - it looks like a cross between a Lava Lamp and something from NASA. I saw a demo for it recently during a dangerous ‘impulse-buy trip’ to Selfridges, which suggested it preserves as much of the nutritional value as possible, by “breaking down the cell wall of the ingredients in to their most nutritious, most absorptive state” (I can’t scientifically verify any of the consumerist catch-phrases, but I can vouch that the consistency of the result is certainly quite unique!). The motor turns over at a rate that’s not too dissimilar to a Formula 1 engine, and that seems to have produced some of the most viscous and sediment-free liquid I’ve every enjoyed. There’s no need to add sugary banana merely for the sake of texture! Also, clean-up is a painlessly quick process, which takes away the effort-intensive bit that’s usually my major gripe with juicing!

INGREDIENTS:
1. One small handful of Raspberries
2. One small handful of Blueberries
3. grams of Spinach
4. Half a Cucumber
5. 1 peeled Lime
6. 1 tablespoon of Chia seeds
7. 150 grams Water

HOW TO:
1. Rinse all the ingredients
2. Pop all the ingredients into the NutriBullet
3. Add the water
4. Spin
5. Bon ap!
