Slow Cooker Mashed Potatoes

This revolutionary way to make mashed potatoes will change how you cook them for ever. They are so easy and delicious you will wonder why you did not think of this before.

Over the Thanksgiving holiday my mother in law and I decided we would split up the cooking duties and have Thanksgiving at her house. She made the turkey and stuffing. I made a ham and mashed potatoes.

My slow cooker is the workhorse in my kitchen. I even transported the mashed potatoes that way. Yup, in the slow cooker. I Plugged it in when I got there to keep it warm. Honestly, it could not be any simpler.

If you have mashed potato duty, you need to give this recipe a try.

I decided to make things easy on myself by cooking the potatoes in the crock pot. I peeled mine, you do not have to, I just like them like that. I added some other things to mine to make them taste good. You can put in them what you want. All you have to do is mash them. I used a masher. Some like to use a hand mixer. You can sit that puppy right in the crock pot and mix away.

Slow Cooker Mashed Potatoes

Yield: 6-8 servings

Prep Time: 10 minutes

Cook Time: 4 hours

Total Time: r hours 10 minutes

Ingredients:

3 pounds Yukon Gold, Russet or Red Potatoes chopped into 1 inch pieces
1 cup vegetable stock
1/2 cup fat free evaporated milk
3 tablespoons grated onion
1/2 cup fat free cream cheese
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:

Add the potatoes, stock and milk to the bowl of a slow cooker and place grated onion on top. Cover and cook on high for 3-4 hours or on low for 7-8 hours or until the potatoes are cooked and soft.
Use a potato masher or an electric mixer to mash the potatoes to your desired consistency. Stir in the cream cheese, salt and pepper. Keep the slow cooker on warm until ready to serve. Serve directly from the slow cooker
