November? Where did this year go. It’s hard to believe the holiday season is almost upon us and before we know it will be 2016. It’s crazy how fast it has gone. We’ve had a really busy year with new jobs, new pets, lots of travel and just living life.
And just like when life gets busy sometimes you want easy comfort food. While most of what I make is pretty healthy sometimes you just want indulgent foods. I don’t substitute anything, or worry about how many vegetables but more is it cheesy, warm and just plain delicious. And this Meatball Bake for The Secret Recipe Club this month is just that. Cheesy, ooey, gooey and delicious. Comfort food at it’s best. Cindy from Hun…What’s for Dinner? is a busy Mom who really wanted to learn how to cook. She was inspried by her chef husband, magazines, and the Food Network.
I can honestly say that I had not purchased most of these ingredients in years but that doesn’t mean they weren’t delicious. Refrigerated biscuits. Darn good. Everything in moderation right? This was one of those dishes that even I went back for seconds. If I am going to indulge I might as well enjoy it.
- 1 can 10 count refrigerated biscuits
- 1- 14oz jar tomato sauce (I used an organic spicy vegetable)
- 12 frozen turkey meatballs (thawed)
- ¼ C Parmesan cheese
- 1 C mozzarella cheese
- Preheat oven to 350 degrees F.
- Spray a 9-inch baking dish with nonstick spray and set aside.
- Cut each biscuit into four pieces and place in bottom of baking dish.
- Cut each meatball in half and scatter over biscuit dough.
- Top with tomato sauce and sprinkle with mozzarella cheese and Parmesan cheese.
- Bake uncovered for 30 minutes until biscuits are cooked through.
