Ingredients
- Bushel of romaine lettuce leaves
- Can of refried black beans
- Old Bay Seasoning
- Black Pepper
- 6 tilapia fillets
- 3 medium tomatoes
- 1 medium yellow onion
- Bushel of cilantro
- Salt
- Mexican cheese blend
- 3 avocados
Directions
1. Pre-heat the oven on 400 degrees.2. Chop cilantro, tomatoes, and onion. (Pico de Gallo)
3. Mix 3/4 of the cilantro, tomatoes, 3/4 of the onion, and desired amount of salt into a bowl.
4. Season the tilapia with desired amount of old bay seasoning and black pepper.
5. Place the tilapia and remainder of the onion on a pan.
6. Cook the fish for 5-10 or until done.
7. Meanwhile, cook the beans as instructed and season with the remainder of the cilantro.
8. Pull apart the lettuce and rinse.
9. Base the lettuce with beans.
10. Split the tilapia fillet in half and place into the lettuce wrap.
11. Sprinkle your desired amount of cheese and Pico de gallo into the lettuce leaf.
12. Cut your desired amount of avocado.
13. Wrap it up and enjoy!
14. Grab another because it’s sooooo healthy that you can have two without feeling guilty!
