Healthy Haddock Ratatouille !!!

This utterly delicious dish was inspired by my admittedly childish love of animation. If you haven’t seen it, Ratatouille is a laugh-out-loud Pixar movie which I think works just as well for adults as for children. Regardless of that side-track, whether you’re a cartoon fan or not, this dish is, as ever, healthy, super easy to prepare and packed with overwhelmingly gorgeous flavour. I teamed it with some fresh Haddock from the local fish mongers which I poached in a filtered water-bath. The main activity involved in crafting a Ratotouille masterpiece is a whole lot of chopping (great cardio), so sharpen your knives and lets go! (MORE)

INGREDIENTS LIST:

1. 1 courgette
2. 1 butternut squash
3. 1 red pepper
4. 2 carrots
5. 1/2 chopped onion
6. 2 garlic cloves
7. Olive oil
8. 1/2 cup tomato puree
9. Pink salt and pepper
10. Rosemary, thyme and chilli (pick your fave herbs)
11. 2 Large Tomatoes
12. Baking paper


HOW TO?

1. Preheat oven to 350 degrees.
2. Chop the onion, garlic, chilli and fry until golden. Add 1 shredded carrot. Then add thyme, basil and rosemary. Finally add the tomato puree and a small touch of pink salt. Using a Kitchen Aid, mix the ingredients until smooth, and set them aside.
3. Pick an oven dish and paint the base with tomato puree.
4. With your sharpest knife you own, start slicing all the vegetables into thin and if possible equal sizes.
5. Now it’s time for the fun part – create a beautiful pattern using the vegetables on top of the tomato puree. .
4. Sprinkle some fresh herbs and drizzle a small amount of olive oil on top.
5. Cover with some baking paper. Let it bake until the vegetables are soft (but not mushy). Depending on the size it shouldn’t take more than 10 minutes.
6. Enjoy now or remove the baking paper and let them grill for a few extra minutes to make them a bit more crisp.

Haddock
1. Start by filling a large saucepan with Brita filtered water and wait for it to boil.
2. Add the haddock and let it ‘cook’ on a low heat for 5 minutes.
3. Done!

The ratatouille is a great option if your eating healthily but possibly a bit bored of you typical grilled to steamed veggies you normally have to accompany a dish. The flavor from the healthy, all-natural sauce is an utter delight! Enjoy :) x
