Who loves Hatch Green Chile? Then you HAVE to try my new Green Chile Lime Salad Dressing! It's the PERFECT way to spice up those boring Summer Salads.
If you know me at all, you KNOW I love my Hatch Green Chile! Some of my favorite recipes are based on the foods I loved when I lived in New Mexico, like my Vegan Potato Soup or my Green Chile Tofu Stew. Both of which are perfect for taking the chill off of a cold New Mexico winter.
But now that summer is here, I thought I'd try a Green Chile Salad Dressing and it was amazing! Thick and creamy with the flavors of green chile and lime and just a hint of cilantro.
Green chile lovers - I hope you enjoy it.

100% Vegan, Oil-Free, and Gluten-Free: Like all of my recipes, this recipe is made without any animal products or bottled oils and is gluten-free as well.
It's FAST & EASY to make: Seriously, you add everything to a blender and press a button. Easy peasy 🤣.
No Cooking Involved: No stoves, no air fryers, no instant pots, not even a microwave. Just you and a salad bowl (and maybe a blender).
It's Different: SO many people think salad dressing means ranch, blue cheese, or some kind of vinaigrette. I guarantee they won't be expecting the bold taste of THIS dressing! And it's GOOD! (and kind of spicy)
Main Ingredients
Hatch Green Chile
You can find the little cans of green chile in almost any grocery store. Just look in the aisle that has tortillas, salsas, and Mexican food products. MOST of those little 4oz cans do not have any spicy heat at all, but SOME do - especially if they say Hatch on the label.
In my opinion, the Hatch has the better flavor - but get whatever you can find.
Plant-Based Yogurt
Kite Hill and Foragers are 2 different brands that make plant-based yogurt. Just make sure it is plain and not vanilla-flavored. Also, there are some Instant Pots that have a yogurt setting if you're into making your own.
Cilantro
I'm one of those weird people that LIKES cilantro, and to me..... cilantro & green chile belong together like peanut butter & jelly. But if it tastes like soap to you..... you can leave this "evil weed" out.

Making The Green Chile Lime Dressing
Step 1
Add all of the ingredients to your favorite blender jar. I love the Nutribullet for small batches like this.
Step 2
Process until smooth and creamy
Salad Suggestions
Try adding rice and black beans to your salad!
The greens provide vitamins & minerals, the beans provide fiber and protein, and the rice provides the starch that will fill you up. (RIP Dr. John McDougall - we miss you)
I also added some carrots, English cucumbers, cherry tomatoes, green onions, and jalapenos. This Green Chile Lime Salad Dressing was the perfect accompaniment for a Southwestern Salad Bowl like this.

Ingredients
Units- 8 oz Hatch green chile
- ¼ cup plain unsweetened plant-based yogurt
- ¼ cup loosely packed cilantro
- 2 cloves minced garlic
- 1 Tbs lime juice
- 1 tsp rice vinegar
- ¾ tsp maple syrup
Instructions
- Add all of the ingredients to a blender and process until smooth.
- Store in a tightly sealed container or jar in the fridge for up to 1 week.
