I am all about doing as much food prep as I can on Sunday to make my breakfasts go smoothly. When I have food ready to go that I can just grab on my way to the gym/yoga/work I take the time to eat. When I have scramble I will just eat a bar or not enough to keep me properly fueled for the morning.
This Greek Yogurt and Chia Seed Parfait is one of those perfect prep ahead meals. Make a big batch on Sunday, spoon it into individual glass containers and top with berries and you will have a filling and delicious breakfast all week.
And to make this even easier? Use frozen berries! A great way to get organic berries off season.
Yogurt and Berry Chia Seed Parfait
Prep Time: 10 minutes + Chilling

- 1 cup vanilla-flavored unsweetened almond milk
- 1 cup plain low-fat Greek yogurt
- 2 tbsp pure maple syrup
- 1 tsp pure vanilla extract
- Pinch salt
- 1/4 cup chia seeds
- 1 cup frozen mixed berries
Instructions
Mix the almond milk, yogurt, maple syrup, vanilla and pinch of salt. Let sit out for 30 minutes.
Stir and spoon into individual containers.
Top with berries and covers. Refrigerate overnight.
