Fig and Almond Tea Cake

This easy fig tea cake is a snack cake made of moist figs and Almonds. Perfect for breakfast or with coffee in the afternoon.

I went to the store the other day and saw some fresh figs. I could not get over how much they were. I am very lucky I have my friend Lisa who has a fig tree in her front yard.

Each year my friend Lisa lets me collect as much of the figs I want from her tree. This year is the same thing except I kind of got there late. There were still plenty of figs, just not as much as previous years.

I guess it is a good thing. I probably would have tried to make all kinds of stuff with those figs. This year I made this cake and did a lot of canning my fig preserves. I love to give the preserves way at Christmas.

This cake is moist and delicious! The combination of figs and almonds are a perfect combination.

Fig and Almond Tea Cake

Ingredients:

3/4 cup melted butter
1/4 cup vegetable oil
1 cup granulated sugar
2 eggs
1 teaspoon almond extract
1/4 cup water
1 1/2 cups all purpose flour
1 teaspoons baking soda
1 teaspoon salt
6 ounces figs roughly chopped
1/4 cup slice almonds
dusting of powdered sugar for garnish

Directions:

Preheat oven to 350 degrees.
Spray pan with baking spray. I used my 10 inch cheesecake pan.
In a stand mixer with a whisk attachment whisk butter oil and sugar. Whip in the eggs until combined. Add almond extract and water.
In a separate bowl combine the flour, baking powder and salt. Add the dry mixture to the wet mixture. Add figs mixing gently.
Pour batter into prepared pan and sprinkle with almonds.
Bake for 25-30 minutes or until golden brown and toothpick inserted in the center comes out clean.
