Egg Muffins – True Low-Carb Breakfast Simplicity

Do you want a really simple and fast* low-carb breakfast? Here are handy muffins that you make before hand, for those who don't have the time to eat breakfast at home. Convenient to bring along and popular with kids.

Do a bunch of these in advance, put them in the fridge and then just microwave one or two for a super-quick breakfast to go.

Cooking time: 20 min.
Preparation time: 5 min.

Ingredients, 4 servings

6 eggs
1-2 spring onions, finely chopped
4-8 thin slices of chorizo, salami or 3 oz. (70 g) bacon
4 oz. (100 g) cheese, shredded
1 tablespoon pesto, green or red (optional)
salt and pepper

Instructions

Preheat the oven to 350°F (175°C).

Chop spring onion and bacon.

Whisk the eggs together with seasoning and pesto. Add the cheese and stir.

Place the batter in muffin forms and add bacon, chorizo or salami.

Bake for 15-20 minutes, depending on the size of the muffin forms.
