Easter LCHF Recipe: Yellow-Beet Salad with Anchovies
Anchovies with yellow beets really brings a taste of Easter!
Ingredients
4-6 servings½ pound (500 g) cooked golden beets
1 small can of anchovy fillets
½ red onion
1 cup (2 dl) mayonnaise
2 baby gem or endive lettuce
fresh chivesInstructions
1. Dice the yellow beets, anchovies and onions finely. 2. Mix with mayonnaise in a bowl.
3. Garnish with finely chopped chives.
4. Serve in baby gem or endive lettuce.
