December Goals

I should have really written this post yesterday but our anniversary was more important. I did a little searching on Pinterest for December photos and I found the one above. I laughed out loud because it’s so true. This is our first and only December in the desert. I’ll be happy to get back to where there is color but I will miss the quiet and calmness of the desert.
I have some December goals for myself. This is the last month of the year and I want to make sure I end the year off strong. We are moving this month so I have been spending a lot of time packing but that doesn’t mean I can’t fit in my workouts. I was running a lot last month but I want to focus on lifting this month. My fiancé helped me come up with some new routines last night. I have my whole week planned out. This will help me stay on track. The thing I’m most worried about for this month is my diet. And when I say diet I am referring to what I eat. Not the four letter word diet. I don’t believe in those anymore. There will be lots of good food around me and I’ll probably indulge one or two days. But that’s it. I’ll make sure my diet is on point all the other days to make up for it.
I will definitely be eating lots of chicken and lots of pomegranate seeds this month. I went to Costco and bought a couple rotisserie chickens. I pulled all the chicken off and put it in a Pyrex so that it’s easy for me to grab when I’m hungry. I know chicken is a great way to get protein in but I hate cooking it. Every time I make it I end up not wanting to eat it. Weird, I know. But I’ll eat the rotisserie chicken for sure. I’ve also become obsessed with pomegranate seeds. They remind me of Christmas and they can be thrown into practically anything.
 
My new favorite is a piece of whole grain toast with hummus, pomegranate seeds and walnuts. It is AMAZING! Please do yourself a favor and try it!
Pomegranate seeds are also really good in quinoa. Quinoa is a very versatile food. You can eat it with savory or you can eat it with sweet. Sometimes in the morning I’ll add some berries and eat that instead of oatmeal. It also works great as a side dish with a protein and veggies.
 
My biggest goal for December is going to be to stay positive. I get down on myself a lot. This journey is hard. But I have to remember where I came from. I found the photo below while I was packing. This was me in 2007. I knew nothing about nutrition and I was a full time college student working three part time jobs, one of which was Starbucks (free coffee and pastries at any time) and another one was Godiva (chocolate samples for snacks). I’ve come a long way and I should be extremely proud of myself. 

The weather is perfect right now. A chilly 63 degrees and cloudy. Perfect weather for a cup of coffee and cuddling on the couch.
