I love corn cakes. What an awkward way to start a post. But really, I love them. My mom made them growing up and they have been one of my favorite recipes of her's that I frequently think about.

I thought I could kick it up a notch (in a non Emeril way) and add another veggie and some spice! If you aren't a spicy food kinda person, go ahead and leave the cayenne pepper out.
