When I found out this month's Recipe Redux was Spring Clean, aka cook with at least 3 ingredients that are actually in your refrigerator or pantry right now, I got to looking through what I had on-hand.

I had a sweet potato that needed to be used STAT, some chicken breasts in the freezer from a bulk buy, and some broccoli that I meant to put into a recipe the week prior and hadn't gotten around to. "Well, gee-golly-gosh," I said to myself, "I got me the fixins of one my favorite lunches from back in the good ol' N-Y-C."

Ok, you caught me. I didn't say that EXACTLY, but I did have a fond flash back to on of my favorite lunch spots in New York, Dig Inn.

On the rare occasion that I didn't bring my own lunch to work, Dig Inn was my go-to. They create all their food from scratch (in fact, you can see into their kitchen in most locations), have plenty of veggies to choose from and always label allergens.

On of my favorite things to get there was a market bowl: your choice of grains or greens with your choice of protein and two market sides. My go-to combo was herb roasted chicken over greens with roasted sweet potatoes and sauteed broccoli with lemon. MMMM MMMM!

So when I saw the main ingredients for a Dig Inn market bowl sitting in my kitchen, I figured I'd give making my own version a go! A few minutes later, and I had my very own Copycat Herb Roasted Chicken Dig Inn Market Bowl!

I simply looked at the ingredient list that Dig Inn provides on their menu, found all the spices and oils I needed in my cabinet and got to cooking. All I needed to get from the store were some fresh greens!

To make it even easier on myself, I decided to roast the broccoli instead of sauté it. That way, I could just throw everything into the oven at once, and if you line your pans with tin foil, clean up is a breeze. The best part of this whole sheebang? You can make a week's worth of these market bowls for about the same price one would run you at the actual Dig Inn!
