When I was a kid, my Dad used to go to Dunkin' Donuts every Saturday to get a large coffee and a bagel with cream cheese. If I woke up early enough, I'd go along for the trip and get a doughnut. My favorites were Boston Cream and glazed.

It's been years since I've been to a Dunkin' Donuts (mostly because they don't exist in Austin), but when Will and I were in Boston a few months ago, we had to stop. Unfortunately, Dunkin' Donuts doesn't offer gluten free doughnuts.

I just got a coffee that day, but a chocolate glazed caught my eye.

I couldn't shake the thought of its glazed deliciousness.

When we got back home, I knew I had to put my creativity hat on to make a chocolate glazed doughnut that wouldn't wreck havoc on my digestive system.

Fortunately, I already had a delicious doughnut recipe I could work off of. I looked back at the recipe for my Gluten Free Pumpkin Spice Latte Doughnuts and tweaked a few things.

Like my Gluten Free Pumpkin Spice Latte Doughnuts, Now Foods pea protein powder replaces flour and gives these treats a magical dose of healthiness. However, apple sauce and cashew butter, rather than pumpkin puree and almond butter, give the perfect cakey texture.

The icing on the cake doughnut is, well, icing!

I made this glaze with Now Foods Organic Powdered Erythritol, but you can 100% use real powdered sugar if you prefer. Simple make your glaze in a shallow dish, dip your cooled doughnuts into the mixture and place them on a wire rack to dry for a bit before devouring every doughnut in sight picking out the perfect one to enjoy.
