Ingredients:
- 30g butter
- 40g raw unsweetened cocoa or cocoa powder
(I used Willie’s Cocoa Venezuelan Black100% cocoa) - 3 medium eggs
- 1/4 cup Truvia (or another granular sugar substitute)
- 1/4 cup unsweetened coconut flour (I used Tiana brand)
- 1 tbsp ground almonds
- 1/4 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp baking powder
Method:
- Preheat the oven to 90C/375F/Gas Mark 5.
- Place a glass bowl on top of a pan of boiling water, so that the boiling water heats up the bowl.
- Put butter and cocoa into the bowl (chop them up roughly to speed up the process). Keep boiling the water until the butter and cocoa are melted and mixed together, stir occasionally. Once melted, take the bowl out and cool.
- Whisk the eggs with Truvia (or whatever you are using instead of sugar), salt, vanilla extract and baking powder.
- Once cooled, add the melted cocoa/butter into the egg mixture, mix thoroughly together.
- Whisk sifted coconut flour and almond flour into the mixture, ensure it is mixed evenly and doesn’t have any lumps.
- Leave the mixture to rest for about 5 minutes.
- Spoon out onto a baking tray (greased or lined with baking paper) and bake for 15 minutes.

Note about Truvia
Truvia consists of erythritol and stevia extract. According to manufacturer, it does not get processed as sugar by human body and has no effect on blood sugar or energy levels, and so effectively contains zero carbs and zero calories. If you are sceptical about such claims, please use another sweetener which you trust, and add on the nutritional values to the totals provided above. You will also have to find another sugar substitute if you follow a paleo diet, as Truvia would not be suitable for you.
