Bacon Mushroom Cheeseburger Lettuce Wraps

Do you want a great bacon cheeseburger, without the carbs? Here's a fantastic option from Carolyn Ketchum at All Day I Dream About Food.

Take your favourite fast food meal and make it low carb and healthy simply by wrapping it in lettuce. I used my favorite cheeseburger and turned it into a quick, easy low carb dinner recipe.

Lettuce wraps are quickly becoming a staple in my house, and with good reason. They are healthy, easy to make and you can fill them with practically anything. They are always well received by the kids, as they delight in anything that they can eat with their hands.

Ingredients, 4 servings, about 12 lettuce wraps

12 slices bacon
4 ounces (100 g) mushrooms, sliced
1½ lbs (680 g) ground beef
½ tsp salt
¼ tsp pepper
1 cup (240 ml) shredded Cheddar cheese
1 small head iceberg lettuce, leaves separated and washed
Additional salt and pepper to taste

Preparation

1. In a large skillet, cook bacon to desired crispness. Remove and let drain on a paper towel-lined plate.

2. Add mushrooms to pan and sauté until browned and tender, about 5 to 7 minutes. Remove from pan and set aside.

3. Add ground beef and season with salt and pepper. Sauté until beef is cooked through, about 10 minutes, breaking up chunks with the back of a wooden spoon.

4. Spoon ground beef into lettuce leaves, sprinkle with cheddar cheese and top with bacon and mushrooms.
