With the start of lockdown, I have been experimenting with my culinary skills and there's a special place for drumsticks in my food, because, according to me, you add this beauty in any form of food like soups or curries, they enhance the taste of the dish and also, improves appetite. Drumsticks are a great source of Vitamin C and considering the current pandemic scenario, boosting our immunity is essential. Vitamin C is great for immunity.
So today, I'm going to share this North Indian recipe 'Sindhi Curry' which is not only simple and easy to make, but also super scrumptious.
As you must be knowing that I talked about drumsticks in the beginning, so yes, we use Drumsticks in making Sindhi Curry and it's also one reason why I opted to try this recipe. I'm sorry I couldn't tag the original sources as she has kept her video private and also, I can find her username. If I ever do, I will edit this post and add the same. This is an authentic Sindhi Curry from a Sindhi woman who shared her Granny's recipe for this dish. I felt like trying it out rather than from any Cooking shows.
Let's dive in through the ingredients in making Sindhi Curry:
Turmeric powder: 1 tbsp & chopped coriander leaves
Crushed ginger garlic and chilli: 2 tbsp Tamarind Pulp: 3 tbsp Tempering(Tadka): Methi seeds(1 tbsp), Curry leaves, Mustard seeds, Hing powder(Asafoetida) Salt as per taste and Oil (4 tbsp) Boiled Vegetables: Carrots, Drumsticks, Potatoes, Cauliflower.Procedure:
In a hot vessel, pour oil and once it's warm, add the tempering (Tadka) ingredients along with the crushed ginger garlic and chili paste and saute until the aroma comes out.
Next, add the Gram flour and keep stirring to avoid lumps. Add bits of water to not let it burn and stir as long as it turns reddish brown or when you smell the aroma. Add the turmeric powder and keep mixing.
Now, add the tomato puree and keep stirring till it reaches a boil. Now, you can add water to match the consistency you want. Now, you can add the tamarind paste and mix the blend.
Next, add the boiled vegetables and salt and stir once in a while and let it simmer for a while. Top it with coriander leaves.
