Why You Should Eat Your Greens Properly

Today the country faces a grave situation wherein the younger generation has taken to junk food from eating healthy hygienic diet. Overall we are slowly becoming deprived of nutritional value leading to several kinds of malnutrition diseases. One of the reasons for this scenario is the lack of awareness among people about the importance of having nutritious diet in the form of greens and other foods. In this article we have listed green leafy vegetables that will serve to be quite useful for a good healthy diet.

Kale

  • Nutritional Value: This leafy vegetable is rich in vitamins A, C and K. It also has a good amount of Calcium, Potassium and Folate.
  • Fact: Kale leaves range in color from cream to purple based on its variety.
  • The best method to cook Kale is to spread Olive oil over its surface and cook them for few minutes with your choicest ingredients like garlic, ginger, broth, etc.

Collards

  • Nutritional Value: They are rich source of Vitamin A and C. Potassium and low percent of Magnesium is also present.
  • Fact: It’s an under-appreciated green vegetable and many people are not aware of Collards.
  • They are usually eaten raw down south by wrapping around instead of bread or tortilla

Turnip Greens

  • Nutritional Value: Turnip Greens are rich in Vitamins A, C and K along with Calcium.
  • Fact: Turnip with the tops is actually two vegetables
  • They are very tender and are cooked with pork and a traditional favorite in the south.

Swiss Chard

  • Nutritional Value: They are rich source of Vitamins A and C.
  • Fact: They contain Oxalates just like Spinach
  • Sweet and sour chard is a favorite with vinegar and raisins added to the boiled greens.

The other green vegetables that you could add to your diet are Spinach, Mustard greens, Broccoli, Cabbage and Lettuce.
