Whole Wheat Orange Muffins Recipe

Kids love muffins and I have found that they are a great hiding place for fruits and veggies! Their resemblance to a cupcake and the general impression that they belong to the ‘cake’ category makes my job easier. Muffins are super versatile and you can add pretty much any fruit to them. Think beyond bananas and try something different – like oranges! Yes, today’s recipe is a fruity recipe for whole wheat orange muffins, filled with wholesome goodness and a lovely citrusy flavor. Can’t think of a better snack than this for summer!

Whole Wheat Orange Muffins

Ingredients:

  • 1 1/4 cup whole wheat flour
  • 1/2 cup curd
  • 1/2 cup jaggery powder
  • 1/2 cup orange pulp
  • 1/4 cup olive oil
  • 1 teaspoon orange zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda

Method:

1. Preheat the oven at 180 degrees Celsius or 350 degree Fahrenheit for 10-12 minutes. Then line the individual muffin holders with paper cups.

2. In a mixing bowl , sieve the whole wheat flour along with baking powder and baking soda. Add orange zest to it and set aside.

3. In another mixing bowl, take orange pulp and curd. Add jaggery powder to it. Whisk well until the jaggery dissolves completely.

4. Now add oil to it and stir well. Our wet ingredients are ready.

5. Gradually add the dry ingredients to the wet ones and blend with a spatula. Do not over beat. Just fold in to get an even and lump free batter.

6. Spoon the batter into individual muffin holder until 3/4 full. Tap the muffin tray and transfer it to a preheated oven.

7. Bake the muffins at 180 degree Celsius for 22-25 minutes or until the tester tooth pick comes out clean. Keep a watch after 20 minutes as temperature may vary from oven to oven.

8. Let the muffins cool down on a wire rack before serving.

These muffins stay good for about two days at room temperature if stored in an air tight container. Since the recipe contains baking powder and baking soda, it’s recommended for toddlers over 1.5 years. The orange pulp and jaggery adds a very fresh flavor and since it’s made of whole wheat flour, you can be sure your kids are enjoying something healthy!
