Whole Wheat Nankhatai Recipe

Cookies are something that bring a smile to people's faces, regardless of age or nationality!! And we're not talking about the ones that come in packets, laden with preservatives and artificial flavoring; we're talking about good ol' home baked cookies! Few things can match the aroma of fresh cookies being baked - yum!

You're probably craving a nice warm batch of home baked cookies now, and we completely understand! So here is a lovely recipe for some healthy whole grain cookies - a Whole Wheat Nankhatai recipe, with a surprise punch of ginger!

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup powdered sugar (according to taste)
  • 1/4 tsp baking soda
  • 1/2 cup (1 stick) butter (if you use salted adjust the salt you add)
  • salt to taste
  • 1/4 tsp cardamom powder
  • 1/2 tsp ginger powder
  • 1 tbsp semolina (rava)

Method

1. Preheat the oven to 325 degrees Celsius. Beat sugar and butter till creamy.

2. Add the cardamom, ginger powder and salt, and beat again. Add the baking soda and beat once.

3. Little by little, add flour and mix till the mixture becomes crumbly. (I used the hand blender here. You can also add some sliced or chopped nuts at this point)

4. Transfer the dough to a a bowl and knead very lightly, just to mix the ingredients. Don't over do it.

5. Make small rolls and place on a greased and floured baking tray, an inch apart from each other. You can use the bottom of a steel tumbler to flatten them slightly.

6. Bake for 15 min but keep an eye on it throughout. Once the outer surface cracks, they will be done soon. Keeping them in the oven for longer might burn the base of the cookies.
